- 1 jalapeño pepper, seeded and diced (optional if spicy isn’t your thing)
- 1 1/4 cups Mexican blend cheese, shredded
- 1 onion, diced**
- 1 teaspoon salt, divided
- 8 soft tortillas, 6-inch
- 1 teaspoon canola oil
- 1/4 cup low-fat plain yogurt*
