Banana Bread
This recipe uses much less sugar than conventional recipes. We used stevia as a replacement for most of the sugar, but it’s still sweet and delicious! Remember when using stevia, it’s twice as sweet so you only need half as much.
Preheat oven to 375 degrees
Mix these ingredients in one bowl:
6 ripe bananas chopped and smashed
1 Tbsp. pure vanilla extract
2 eggs (1 tbsp. ground flax + 1 tbsp. water can replace each egg)
1 tbsp. raw sugar or honey
1/3 c. stevia
1/3 c. vanilla or plain Greek yogurt (if you omit yogurt, add more milk or substitute)
1/2 c. butter or 1 c. unsweetened applesauce
1/4 c. milk (coconut milk works great as a replacement)
Mix these in another:
2 c. whole wheat
1/2 c. rolled oats
1 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
Combine everything and add:
1/2 chopped walnuts
Grease pans with coconut oil or butter. Bake for 1 hour. Enjoy!
