In January, The Co-op Kitchen featured sweet potatoes. Here is one of the recipes Luann shared on the show. It’s really easy and you can customize it with your favorite spices. Luann encourages you to experiment with a variety of spices to find combinations that you like.
- 1-2 sweet potatoes sliced in French fry lengths (you can peel them or leave the skins on – whichever you like)
- Olive oil
- Chili powder
- Smoky paprika
- Salt and pepper
Cut up potatoes in lengths and place on a cookie sheet. Drizzle with olive oil and toss to coat. Sprinkle with chili powder and paprika. Finish with salt and pepper. Be generous if you like spice.
Bake at 425 for 15 – 20 minutes. Let cool slightly and enjoy!
