Amaranth Carrot Raisin Cookies

Yields 30 1.5” cookies.        Preheat oven to 350.        Bake time: 12 min

Ingredients:

Dry:

2 c. Amaranth flour

⅔ c. Arrowroot starch

½ tsp. Sea salt

1 tsp. Baking soda

1 tsp. Cinnamon

Wet:

½ c. Vegan butter; softened

¼ c. Molasses

¼ c. Honey

2 tsp. Vanilla

Add to wet:

⅔ c. Grated carrot (3 small or 2 large carrots)

⅔ c. Raisins

⅔ c. Walnuts

 

Directions:

Combine dry ingredients and sift. Combine wet ingredients, mix well adding carrot, raisins, and walnuts last. Combine all wet with dry and stir well. Roll into 1” balls and place on cookie sheet (lightly greased) or use parchment paper. Bake at 350 for 12 minutes.

Amaranth is a gluten free grain packed with good! It’s a great source of protein, lysine, antioxidants and fiber. It has been found to lower cholesterol levels, help with inflammation, lower blood pressure, and aid in preventing cancer- yeah!

 

*This recipe was adapted from a Bob’s Red Mill Amaranth Flour recipe. I changed many things to be the way I prefer them, but feel free to use their recipe or make alterations to fit your eating preferences!
